Keto Chicken and Broccoli Stir Fry

Ingredients:

  • 2 tablespoons olive oil

  • 2 cloves garlic, minced

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

  • 2 cups broccoli florets –

1/4 cup low-sodium soy sauce

  • 2 tablespoons sesame oil

  • 2 tablespoons honey

  • 1 teaspoon ground ginger

  • 1/4 teaspoon red pepper flakes

  • 2 tablespoons toasted sesame seeds Instructions:

  1. Heat the olive oil in a large skillet over medium-high heat. Add the garlic and chicken and cook until the chicken is cooked through, about 5 minutes.

  2. Add the broccoli and cook for an additional 2 minutes.

  3. In a small bowl, whisk together the soy sauce, sesame oil, honey, ginger, and red pepper flakes.

  4. Pour the sauce over the chicken and broccoli and cook for an additional 2 minutes.

  5. Serve with toasted sesame seeds.

Keto Chicken and Asparagus Sheet Pan Dinner Ingredients:

  • 2 tablespoons olive oil

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes

  • 1 pound asparagus, trimmed and cut into 1-inch pieces

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon dried thyme –

1/4 teaspoon salt

  • 1/4 teaspoon black pepper Instructions:
  1. Preheat the oven to 400°F.

  2. Line a baking sheet with parchment paper.

  3. In a large bowl, combine the olive oil, chicken, asparagus, garlic powder, onion powder, oregano, thyme, salt, and pepper. Toss to combine.

  4. Spread the mixture onto the prepared baking sheet.

  5. Bake for 20 minutes, or until the chicken is cooked through and the asparagus is tender.

  6. Serve warm.
